We stayed with one of my old school friends a couple of months ago and she made us the most delicious chicken and pearl barley casserole for supper. Pearly barley has never really been on the radar before, but I have now invested 50 of my hard earned groats in a bag of my own.
Now what to use it for? Over the weekend I made my first ever batch of lemon barley water. In a bid to cut out unnecessary plastic from our lives I stopped buying cordial some time ago. It's on the sharp side, but that suits my personal taste and gives me another product I can make for myself.
Next I think I shall be trying out a risotto recipe and then who knows I might go wild and venture into the realms of trying a pearl barley soup when the weather is a little cooler. The world really is my oyster😁 It makes a good addition to my thrifty larder.

Do try pearl barley as a thickener when slow-cooking tough beef with root veg, Aril. I add it late in the process, when the meat is tender and the carrots can be cut with a fork.

I love barley in a chunky vegetable soup. The nuttiness with the broth and vegetables is so comforting.

Lemon Barley water reminds me of helping my auntie take cold drinks out to the hay bailing gang on the farm during summer holidays......in NZ in the 60's. For some reason it was the drink to give. I was surprised to see it being sold in a food court in Singapore a few years ago. Aloha
